Cardamon Granola!

Granola is a delicious breakfast staple! Similar to muesli but coated in a sweet and sticky binder, it tastes great but is often laden with sugar! Add dried fruit to the mix and you could find that you’re inadvertently consuming more than 2 tsp (10g) in your first meal alone. Add milk and a chopped banana and you’re well on your way to half of your recommended daily intake of sugar.

With that in mind, here’s one of my favourite homemade granola recipes. With warming cinnamon and exotic, aromatic cardamon it’s perfect as we head into autumn. Better yet, a single serving (45g) contains half the usual amount of sugar without compromising on taste!

Serve with Greek or plant-based yogurt for a filling, nutritious breakfast!

Cardamon Granola

40g coconut oil

50ml maple syrup

1 tsp vanilla extract

200g jumbo oats

75g hazelnuts, roughly chopped*

50g shelled pistachios

50g pumpkin seeds

50g sunflower seeds

1 tsp ground cardamon

1 tsp ground Cinnamon

75g coconut flakes

  1. Preheat the oven to 175C and line a baking tray with parchment

  2. Heat the coconut oil in a large pan to melt then stir in the maple syrup and vanilla extract, stir to combine

  3. Add all of the dry ingredients - except for the coconut - and stir to coat evenly

  4. Spread the mixture out evenly onto the lined tray and bake for 20-25 minutes 

  5. Add the coconut to the try, gently mix in then bake for a further 5-7 minutes, just until the coconut started to turn golden

  6. Leave to cook on the tray then store in an airtight container

*you could add any other nut or even a mix of nuts here - pecans and/or walnuts would be lovely! - but do try to keep the pistachios in as they add a lovely pop of colour!
