Almond Butter Chocolate Dates
WARNING! These are massively addictive! The perfect size for a quick pick-me-up come elevenses, the 3pm slump, or anytime in between…if you can exercise a little self control and just have the one!
Seriously, I must have eaten a bakers’ dozen of these in the past few days! They are so decadent - chewy, gooey and the not unlike a Snickers bar you won’t regret giving them a go.
On top of the incredible taste, these are super simple to whip up and require only 3 ingredients! I will add that you must use Medjool dates. These are the big, juicy variety which give the gooey, caramel-like taste and texture. I just don’t think any other variety would match up. Also, don’t skimp on the ingredients. As there are so few required, the end result relies on good quality. Think: proper, crunchy almond butter with no hidden nasties (palm oil and other such additives) and 70% dark chocolate.
Almond Butter Chocolate Dates
Makes 10, easily scaled
10 medjool dates
5 tsp almond butter
100g dark chocolate
Line a plate or chopping board with parchment and set side
Destone and stuff the dates with 1/2 tsp nut butter placing each one on the plate as you go
Freeze for 15 minutes, just to firm up
Meanwhile gently melt the chocolate in a bowl
Dip each stuffed date in the chocolate and return to the lined tray*. Then pop the tray in the fridge for 30minutes, or until the chocolate has set.
*If you’re vibing chocolate salted caramel then I strongly suggest you sprinkle a teeny bit of flaked sea salt on top of the dates before the chocolate sets!
Note: you can freeze these however once defrosted they may lose their impressive, shiny exterior. Something to bear in mind if you’re making these as a gift!
